Happy Mother's Day! We are serving this today . . . originally known by Betty Crocker as Raspberry Poke Cake, but renamed by my mother back in the 70's to encourage my making it for her, I suspect. She also would tell me frequently that I made the best Angel Food cake -- better than the store! Don't know about that, but it made me feel good.

1 box Betty Crocker white cake mix
(with ingredients called for on cake mix box)
1 box (4-serving size) raspberry or strawberry flavored jello
1 cup boiling water
1/2 cup cold water
1 container (8 oz) whipped topping (3 cups)
Fresh raspberries or strawberries
Heat oven to 350 (325 for dark or nonstick pan).
Make and cool cake as directed on box for 9 x 13 pan.
Pierce cooled cake all over with fork. In small bowl, stir gelatin and boiling water until smooth; stir in cold water. Pour over cake. Run knife around sides of pan to loosen cake. Refrigerate 2 hours. Frost with whipped topping; garnish with raspberries or strawberries. Store covered in refrigerator.

and why aren't you calling it Kimmy Cake?? That is what we called in at Ricks! I loved that cake. I'm so glad you posted that recipe!!!
Betty Bailey did rename it Kimmy Cake ... Betty Crocker calls it raspberry poke cake. I hadn't fixed this since my children were small. They all loved it and had seconds, even Jenna. Light, cool, refreshing and delicious!
